This past weekend, the world of wine came to Nantucket Island. I sipped, spat, tasted, my way through several days, many events, and enjoyed oh-so-many conversations with fellow wine lovers.
One pairing that stood out on the Gala evening was a late harvest dessert wine with foie gras. An Hungarian Tokaji (similar to a Sauternes) was placed next to Hudson Valley Foie Gras. The Tokaji by itself was delicious. Deep, rich, and sweet, although not cloyingly so. The team at Hudson Valley Foie Gras took their excellent foie gras and incorporated it into a sublime parfait recipe (Recipe to follow). Paired with the Late Harvest wine? Perfection.
